Apple and Blueberry Crumble

One of Huma's favourite Xmas desserts is her Apple and Blueberry Apple Crumble. She made it for her family at Christmas last year and it was a real hit, so we wanted to share it with you too!

INGREDIENTS

Filling:
¾ cup maple syrup
½ cup cashew butter
¼ tsp salt
3 medium red apples (peeled and chopped)
1 tsp cinnamon
1 tsp vanilla extract

Crumble:
2 cups rolled oats
½ cup cashew butter
½ cup maple syrup
¼ tsp salt
½ tsp cinnamon
Handful of blueberries (optional)

HOW TO MAKE

  1. Preheat oven to 180°C.
  2. Mix the maple syrup, cashew butter, salt, cinnamon and vanilla extract together in a large bowl until its completely mixed together and turns into a caramel like mixture.
  3. Add in the apples and make sure they are all covered in the caramel mixture.
  4. Pour the mixture into a square baking dish (I used a 22cm x 22cm).
  5. Add all the topping ingredients, except for the blueberries, into a food processor and pulse until combined.
  6. Roughly spread the topping over the apple mixture. Sprinkle over the blueberries.
  7. Bake for 40 minutes.
  8. Serve hot and enjoy!
